The job is expected to take one day. I've had trouble with another plumbing company that hasn't provided an estimate after two weeks, but they did quote me $760 for just the water filtration system. Is this price too high, average, or reasonable?

Are you buying the laundry sink yourself? If the plumbing is accessible and you're close to existing plumbing, it seems a bit high for the Midwest. I suggest always getting at least three quotes to find the best deal and understand your options better.
Separating the two tasks would definitely give a clearer picture.
