I'm considering using a 2mm thick piece of steel to make a chip carving knife. Would this thickness be too much if I give it a flat grind?

You can definitely work with a 2mm thick steel, but the key is whether it's the right type of steel and if it’s properly heat-treated for carving. That's going to affect how well it performs as a knife.
