I'm considering using a 3000 sq ft space in a greenhouse to grow food solely for my family of six. We follow a fully vegan diet, so I need to focus on crops like tomatoes, cabbage, cauliflower, peas, beans, leafy greens, fruits, millets, lentils, microgreens, and herbs. I'd appreciate suggestions on an optimal mix of these plants to sustain us, especially since we don't eat root vegetables like potatoes. Any help would be super valuable!
