I've heard that it's a good idea to spray the trim before painting the walls, but I'm wondering if I should mask the walls around the trim first or if it won't be a big deal if I don't. Will the overspray be noticeable after painting the walls?

Most folks usually paint the walls first when not in a new construction space where spraying is easier. In an empty room, though, spraying first could work okay if you're careful. Just be prepared to do some touch-ups afterward.
From my experience, you should really paint the walls first, then mask them and paint the trim. It helps avoid spills on the trim and gives a cleaner finish. Plus, don’t worry if some wall paint gets on the skirting; you can cover that up later.

I mentioned that the room is completely empty, so there’s no old paint to worry about.
