I've discovered that I'm super allergic to cucumber plants, but interestingly, I have no issues with the actual cucumbers! Whenever I work with the trellis or even just reach to pick a few, my arms break out in itchy red bumps that sting and burn. I've even had times when it got so bad that I couldn't be in the sun for weeks without suffering. I've read something about developing sun allergies due to this kind of reaction. I mean, is this a real thing? Should I just completely avoid cucumber plants? What have you all experienced?

It sounds like you're dealing with contact dermatitis from the fine hairs on those cucumber plants. They can really irritate sensitive skin. Those little hairs can act like tiny needles, causing pain and blisters if you touch them. Wearing gloves and long sleeves is really the way to go when handling them!
It's definitely those hairs. I've had to deal with several blisters before realizing I just needed to protect myself better.
I had a similar reaction with cucumber leaves and squashes. Farmers Defense sleeves work wonders! Ever since I got them, I've had way less irritation. Definitely recommend picking up a pair if you're gardening frequently!
