I've been thinking about whether anyone has tried adding compostable kitchen scraps straight into their garden bed after transplanting seeds. Has it worked well for you, or are there any drawbacks I should be aware of?

Look into the trench composting method—some swear by it! But if you want the best results, pre-composting scraps before adding them to the garden is usually a safer route.
You can actually dig a trench and bury those kitchen scraps before using the garden bed. It's a good idea to do this ahead of time so the scraps have time to break down and build up nitrogen in the soil. It really helps the plants in the long run!
I personally wouldn't do it. It seems like a recipe for attracting pests!

That's a good point! I've noticed that kitchen scraps can bring in snails and slugs, which is why I switched to using a composter instead.
