I recently wrapped my kitchen island with some free interlocking cedar planks I got, and now that they look so great, my wife wants to keep the natural finish instead of painting them. I've seen a lot of recommendations for using linseed oil for this type of wood. Is that the right choice for finishing cedar planks indoors?

Yeah, linseed oil can work on cedar, but there's a catch! It takes a long time to cure, and you'll definitely want to air out the room while it's drying. A fan can help with the fumes. Just keep in mind that you'll need a respirator to deal with the VOCs. So, be prepared for some strong smells for a bit!
I actually wouldn’t recommend linseed oil for indoor use. It has a slow curing time and can release odors for quite a while. Plus, it's not super durable, meaning you'll have to reapply it often. You might want to test out Danish oil on a hidden part or consider using 3-4 coats of Waterlox Original for better durability instead!
