I recently had a new electrical mast installed and just noticed some gaps and holes in my roof soffit. I'm wondering if using a spray foam product would be the right way to go for filling these gaps or if I should consider a different method. Here's a photo for reference: https://imgur.com/a/BfHCBwO.

From my experience, spray foam isn't typically the right choice for these kinds of gaps. It might be better to properly fix the soffit instead. It’ll likely give you a more secure and lasting solution than foam, which can fail over time.
Using spray foam might not be ideal here since the gaps are quite large and hard to access. I've dealt with this in my projects, and I’d suggest either blowing in loose fiberglass insulation using a rental machine or cutting a small section of the soffit to access and repair it properly. Just be careful if it’s near any vents!
Honestly, this looks like a poor installation job. You should get that board properly secured first so it doesn't warp. A patch over the hole might be your best bet. Just use some material to cover the area and get it secured down, then foam whatever little gaps are left.
