I found what seems to be an old septic line running through the studs of my wall. It's definitely not in use anymore since we've connected to city sewer. The stud is notched, but not fully cut through. Should I just remove the old line and replace the studs? This wall has been standing like this for over 50 years, but I want to make sure I handle it properly.

Honestly, if you’re asking me, that’s not great construction. If it's a load-bearing wall, it definitely shouldn't be like that. You might want to consult a pro just to be safe.
That pipe looks like a vent for sewer gases that runs up through the roof. It might still be linked to your plumbing system, so removing it could cause problems. While it’s not ideal that it was placed this way, I’ve seen similar setups in houses from that era. Just a heads up, in my 1952 home, some of those vent pipes were also not perfectly centered through the studs, and they seemed to hold up just fine.
