I'm planning to salvage the Bluetooth circuit board and controls from a low-cost mono Bluetooth speaker, but I want to significantly improve the battery life. My goal is to replace the small 3" speaker with either two 6x9 speakers or just one if necessary. Do you think this is a reasonable project for someone who's fairly handy with tinkering? Also, if anyone knows of some useful YouTube videos on this topic, I'd love some recommendations!

That sounds like a fun project! You might want to check out Instructables—there are people there who have tackled similar upgrades. Just be prepared; it may be more complex than it seems at first. Also, r/maker and boards like Adafruit could be great resources for advice and parts.
What you really need is a good Bluetooth amplifier, like the one linked here. Pair that with a solid portable power supply, and it'll help a lot. Just keep in mind that the controls from the cheap speaker may not add much value, so focus on the amp and battery.
