I'm trying to find the right router bit for cutting a horizontal channel into wood. Specifically, I want to use it on a router table to create an 1/8th inch wide channel about 1 inch into the hollowed-out center of a piece of wood. Does anyone know if such a bit exists, or would I need to resort to cutting it into smaller pieces and using my table saw instead?

You might want to look at a rabbet or slot cutting bit for this job. There's a type that comes with a replaceable bearing, allowing you to adjust the depth to your needs. This should work perfectly for a channel like you described!
It sounds like a 1/8 inch upcut bit could work for your needs. Don't forget to check out pattern bits or straight bits too; they might fit your project well!
If you’re trying to create that channel in the middle of the wood, a slot-cutting bit would be the way to go! It should give you the clean cut you’re looking for.
