I'm in search of a flush trim bit that features a thin bearing—not in diameter, but in thickness! I'm veneering a piece that has a 1/4 inch deep pocket which I'm just veneering over. The problem is, all my flush trim bits have bearings that are too thick for my needs. I'm open to any advice or alternative methods for tackling this challenge, so any suggestions are welcome!

It sounds like you're trying to flush trim the veneer, right? Ideally, you'll want a bit where the bearing can directly ride against the veneer to give you a clean cut. Have you checked specialty woodworking stores or online? They often have bits with thinner bearings that might suit your needs. Also, if you're comfortable with it, consider modifying a standard bit by swapping out the bearing for a thinner one to fit your project better.
I had a similar issue once! Instead of a flush trim bit, you might try using a router with a template and bearing bit setup. You can adjust how you set things up to work with the pocket depth. Just make sure to secure everything well. Let me know if that helps or if you need more tips!
