I'm in the market for a manual transfer switch that can handle 200A and has a two-pole On/Off/On configuration. This switch is intended to transfer my home between the grid and an inverter. Are there any reliable models or brands you'd recommend?

Consider using an interlock kit instead of a transfer switch. The inverter probably won't handle 200A, so a manual switch might be overkill. But if you’re looking for total control, then definitely go for that switch you mentioned!
I've had good luck sourcing my transfer switches from local electrical supply stores. They usually have a decent selection in stock. I've used models from GE and ABB, depending on what’s available at the time.
