I have a small shed and it's nearly taken over by my regular metal wheelbarrow. I'm considering foldable options and I've come across brands like Gorilla Cart and some camping/festival carts. Do you know of any other good ones? If not, have you tried either of those and what are your thoughts? I usually need it for transporting large plant pots, tools, big bags of soil, and occasionally paving slabs.

If you’re not hauling loose dirt, a fridge trolley might work better for your needs! They're great for carrying pots and slabs and can handle the stuff you mentioned really well.
