Need Advice on Repairing a Plaster Ceiling After a Roof Leak

I recently bought a house that has a bedroom ceiling in dire need of repair. There was a roof leak in the past, but I've replaced the roof. Now, I'm worried about the plaster and potentially the rockboard behind it needing some attention. It's been nearly a year since I moved in, and although I haven't seen any leaks, I'm concerned about moisture leading to more damage, especially since I've noticed humidity issues in the house. So, what's the best way to tackle this? Should I just remove everything and install Sheetrock, or can I fix the existing plaster? Thanks in advance! It's great that you've replaced the roof! That alone should help prevent further leaks. However, since you're noticing humidity problems, it's a good idea to inspect the ceiling thoroughly for any signs of moisture damage.
