I'm trying to install a bidet on my toilet, but the way it's designed makes it really hard to access the screws under the seat. My toilet is enclosed, so I can't reach them from underneath. Is my only choice to completely remove the toilet to get those screws in?

It sounds like a tricky situation! If you're really stuck, a socket wrench might help you get in there if there's just enough space. Otherwise, consider using those special Kohler-type fasteners that fit threaded inserts for mounting. There are also splitter fittings available for the water supply that attach from inside the toilet. You can likely find these on Amazon or at a plumbing supply store.

I can't reach under the toilet, which is the problem. The bidet I bought needs those screws tightened from underneath!
