I recently had my old TV mounted professionally using a full motion wall mount from Home Depot. Now that I've got a new TV, it seems compatible with the mount, but I can't figure out how to configure it for the VESA 300x200 setup. I'm looking for recommendations on an adapter that would work since I want to avoid taking the wall mount down and starting over.

Honestly, TV mounts are quite universal. I've often mixed and matched parts from different mounts to make things work. You might just want to try removing the section that's not fitting and see if you can find a mounting plate that works. Sometimes you can get away with drilling new holes if necessary. It's all about trial and error!
I took a look at the pictures for your current mount on Home Depot's site, and there’s a diagram showing the 200 x 400 setup. You might want to check those extra holes; they could align with the 300 VESA pattern you need!
If it were me, I'd consider just replacing the entire mount. There are plenty of solid options out there. I found one on Amazon that supports the 300x200 configuration—might be worth checking out!
