Need Tips for Retiling After Shower Valve Replacement

I'm in the process of refreshing my shower by replacing the valve, but I'm running into some issues. I wanted to use the existing holes and cover up the unused ones with a renovation faceplate, but it looks like that might not work out. Now, I need to retile part of the shower. The setup is pretty old, with tile adhered to what seems like plaster that has a metal mesh behind it. What's the best approach for removing a large section and retiling? Should I replaster before I tile over it?

I hear you on the fitment issues! I’m switching to a Delta valve, which requires at least an 8-inch distance from the valve to the tub spout. That’s why I’m leaning toward re-tiling, since my current setup is way off.
