I'm working on replacing the drywall and insulation in the wall between my unconditioned garage and my conditioned living space. Currently, the insulation has a double kraft face. Is that appropriate? If I switch to single faced kraft insulation, which direction should the Kraft side face? I'm accessing the wall from the garage side, and I've already taken down all the drywall in there.

Yeah, insulation is indeed tricky! That double faced stuff is often used to help with air sealing, but if you're sticking with single faced, just make sure the kraft side faces the warmer side of the wall. It'll help prevent moisture buildup.
