I'm trying to find an easy way to use my Ecoflow Delta Pro with some rigid solar panels on my roof. I'm not interested in getting into any complex wiring. Is it a crazy idea to just run a cable over the eave and through my window to charge the Ecoflow from time to time?

You might want to check your local codes because you may need permits for any permanent solar installations on your house. This method could work, but most people usually opt for a non-permanent setup. You could also build a ground rack for the panels instead, which is what I started with before overcomplicating things.
