I recently built a simple trellis out of cedar 2x4's for my vegetable garden and applied two coats of Odie's Oil, letting it cure properly between each coat. Given that it will be exposed to lots of sun, rain, and occasional sprinkler spray, I'm wondering if it's worth it to spend extra time and money on applying Odie's Wax for additional protection. I live in Minnesota where we experience hot summers and extreme winters. What do you think?

Have you considered using Spar varnish? It's also known as marine varnish, and it might help your trellis endure the weather for a longer period. Just a heads up though, as far as I know, Spar varnish isn't food safe, so be cautious if you’re worried about safety for your veggies.
I think adding the wax is a smart move for outdoor projects, especially in direct sunlight. I often use Odie's for my projects and just finished a top piece on a chair cabinet. I slathered on the original oil, worked it in over a couple of days, and after a storm, it was still repelling water. If I see any wear, I'm definitely going to add wax for extra protection. Just remember you'll need to maintain the coating over time!
