I've been watching a lot of videos where people fit plywood to studwork while it's still laid down. Isn't plywood crucial for keeping the wall level and square? Wouldn't it make more sense to attach the plywood after the studs are vertical and leveled?

I think framing it to be 'square-ish' is often good enough in many cases. If you’re not building a strict framework, it doesn’t have to be perfect. Just make sure the plywood is secured well!
Honestly, fitting plywood while it's on the ground can be a lot easier. You can check if everything is square before standing it up, and that can save some hassle later on. Plus, it might actually be simpler to get everything level when you're not working at an angle!
