I'm having a really tough time getting the nut off my Kohler shower head. I've tried using WD-40 and an adjustable wrench, but I'm putting so much force on it that I feel like I might bend the water line going into the wall. What am I doing wrong? Any advice would be appreciated!

It sounds like you might want to use two wrenches – one on the shower head and another to stabilize the pipe. You could also try vice grips for a better grip. Just be careful not to damage the shower arm while you're at it!
WD-40 might not be the best choice here. Consider using products like Knocker Loose or PB Blaster instead. Just spray it on and let it sit for a bit. Fair warning though – PB Blaster has a pretty strong smell!
