I'm looking to install a new outlet behind an existing one and I'm considering using an old work electrical box. I've used those old work boxes quite a bit, and they hold up really well! I've never had any issues with them falling apart or anything like that.
Honestly, you're overthinking this. To strip the screws, you'd have to really go overboard tightening them. Just don't go full Hulk on it, and you should be fine!
Old work boxes have been trusted for years and do just fine. They comply with all the necessary codes, so no need to worry too much. Just make sure the hole is cut properly for a good fit—tighten them well but not too much!
