I think using a desk frame can definitely work for an outfeed table, especially if you want the flexibility to adjust it. Just make sure the frame is sturdy enough to handle the weight of the plywood and any materials you place on it. If you're primarily working with sheet goods, the 150lb capacity might be a bit tight, so consider the total weight when fully loaded.
