A company quoted me $2000 to create a standard doorway, which feels excessive. Any budget-friendly suggestions?

You could definitely frame the opening to fit a regular interior door. Check your local home improvement store for any doors on sale—sometimes you can get a steal! You could finish the edges with wood or something like shiplap to match your decor. No need to go all out with drywall.
Bi-fold doors could be a good solution here! They'll block off the view somewhat, but they don't do much for sound insulation. If sound privacy is key, you might want to consider adding a small piece of trim to close the gap in the middle of the bi-fold.
