I'm looking for advice on the most economical fruits and vegetables to grow inside. I'm curious if there are specific types that are easier or cheaper to cultivate indoors, especially if I don't have a lot of setup like grow lights or greenhouses. What have you found to work well?

Definitely try out some herbs and lettuce. They’re pretty easy to grow indoors and don't take up much space. Just make sure they get enough light, and you're golden!
If you want something that grows from seed to harvest, snow peas can actually do pretty well indoors! Just put them where they can catch the most sun. They thrive when the day length hits 8 hours or more. Sure, the yield might be smaller compared to growing outdoors, but they’re still a solid option for the windowsill! Just be careful not to overwater them—keeping the leaves dry helps avoid fungal problems.
I’d say sprouts and microgreens are about the easiest and cheapest. You don’t need extra lights or heat for those, just a good windowsill. Super simple and rewarding!
