I've been watching a lot of tutorials on building crosscut sleds, and most recommend using plywood. However, I've noticed small defects in the pieces I've found, which makes it hard to ensure everything is square and plumb. I'm wondering if anyone has experience with other materials like MDF or melamine, and what the community thinks is best for this project.

MDF is a solid pick too! It's usually really flat and easy to work with, but it does wear out faster, so be careful. Melamine is another option, though it’s got particle board in the core, which can affect durability. Both materials can work well for shop projects if you're okay with those trade-offs.
A lot of people suggest Baltic Birch plywood for sleds since it’s high quality and tends to be pretty flat. It might be a bit on the pricey side, but it’s generally considered the best option if you want a solid build.
