I've got an abundance of tomatoes this year and I want to try making something with them besides just eating them fresh or tossing them in salads. What recipes or ideas do you all have for using them up?

Salsa is a game changer! Check out this recipe for canned tomato salsa—it's super easy! You can make it and keep it in the fridge if you go through it fast. For something fun, you might also want to try a fermented salsa!
If you don't want to can or freeze, consider drying them in a dehydrator—that cuts down on volume and is less work than canning. You can also go for sauces, ketchup, or even a tomato cake if you’re feeling adventurous!
Tomato cake sounds wild! I’d love to hear how it turns out.
You could make some delicious tomato sauce! It freezes really well, and if you freeze the tomatoes first, the skins will slip off easily when you defrost them. Another option is to whip up some tomato soup; it’s also freezable!

That fermented salsa sounds interesting! I'll have to check it out. I usually stick to regular salsa.
