Hey everyone! I'm planning a winter garden in Zone 5b, where temperatures can drop to -20°F each winter. So far, I've got Vates Scotch kale, GA Southern collards, Austrian winter peas, Giant of Musselburgh leeks, and Purple Top turnips in mind. I'd love to hear any suggestions for other vegetables that can thrive in such harsh cold. Also, if anyone has experience with winter gardening in similar climates, please share your tips! Thanks!

From my experience in Zone 5, nothing can really survive temps that low without a heated greenhouse. However, things like chives and strawberries can overwinter and come back strong the next year. It’s best to aim for crops that can survive just above 0°F until the colder weather hits. If you’re hoping to harvest something in December or January, consider starting them early!

Yeah, I agree! I’ve found that as long as you plan well, you can have fresh veggies even in late winter.
