I'm planning to start my planting on April 1st since my last frost is on April 21st. I already know I can plant Swiss chard and spinach, but I'm looking for more options. What other edible plants can I sow now that can handle some frost? Also, is there anything I could plant even earlier?

If you like fava beans, they might be a good choice! Also consider planting beets, radishes, broccoli, cauliflower, lettuce, kale, and bok choy. These are all quite frost-tolerant and should do well right before your last frost. Oh, and don’t forget about peas! They're great for early planting too.
Totally agree with others! Lettuce, peas, and kale are good choices. Maybe try some strawberries for a sweet touch! Just avoid anything that bears fruit like basil, since they’re more finicky with frost.
You can definitely plant peas, leeks, onions, and several brassicas like broccoli and cauliflower. Root veggies like carrots and beets can be sown directly in the ground, while you might want to start others indoors first. They’ll handle the cold nicely.
