I received some zucchini from my mom's garden, but one of them looks a bit unusual. It's large, has a color similar to zucchini, but is really tough to cut and doesn't have the usual zucchini taste. The seed-to-flesh ratio seems high, and the texture feels quite fibrous. Can anyone help me identify what this might be and if there's any way to use it? Otherwise, I might have to throw it away. Totally normal! It looks like you let it grow too large. Check on the smaller zucchinis next time, ideally when they're about 1 inch in diameter for the best flavor. If left longer, they can turn into something more like winter squash.
It sounds like you've got an overripe zucchini on your hands! When they grow too big, they can lose their tenderness and end up tasting different. If you want to salvage it, you could try shredding it for use in bread or muffins, or even using it in soups where the fibrous texture wouldn't be as noticeable. Just make sure to remove the seeds!
