I started some new garden beds last year without knowing about the right methods, so I have three 4'x8'x1' beds filled with a mix meant to be soil, sand, peat moss, and compost. I don't want to just throw all this soil away, so I'm looking for suggestions on how to make the best of it! Any ideas?

Just plant whatever makes you happy! It's your garden, after all—don't stress about getting high yields all the time. Enjoy the process!
You don't need to toss it out! Just amend your existing soil with 'Mel's Mix' or something similar as you go along. It's really flexible, so you don't have to stick to a strict 1:3 ratio or anything like that.
Are you thinking about not using those beds anymore? If so, consider planting cover crops or companion flowers to keep the soil alive. They can help deter pests and attract helpful insects like bees and hummingbirds, which is always a bonus unless you're allergic!
