What type of hinge or joint can create a floppy connection for my chicken model?

I'm planning to create a chicken model similar to one I saw in a shop, but I want the wings and legs to be floppy. I also want the connection to be invisible like in the photo I'm referencing. Can anyone suggest what kind of screw or joint would work best for this?

For this, I'd recommend using screws along with washers. You can screw into the body of your chicken and leave enough thread exposed so that the washer can spin freely. To make it neat, drill an inset for the screw head to sit in the legs, and then glue the legs to the washer. This way, the legs will be floppy but connected securely!

You might need to think outside the box a bit! I suggest using a bolt with a simple bushing. This setup could give you the floppy effect you're after, but it might require some creative adjustments to get it to look right.
