I just bought a new home, and I noticed there's only one downspout connected to the roof. Unfortunately, it ends right at the base of the house and only has one of those short plastic runoff pieces. I'm planning to bury some tubing to redirect the water but I'm curious—how far from the house should I run it?

Ideally, you want the downspout to end at least 10 feet away from your foundation. If you can manage it, going 25 feet is even better to ensure drainage away from the house. This helps prevent any water issues in the long run!
I'd recommend going as far as you can while keeping a good slope for the water to flow. A common minimum is around 10 feet, but many people aim for about 24 feet if possible. Just make sure it doesn’t pool anywhere nearby.

That's good to know, but my yard is pretty flat, so I'm not sure 24 feet is feasible. Any tips for dealing with flat drainage?
