I'm in the process of sprucing up my old brick patio and need to fill in the gaps between the bricks. I specifically want to avoid using polymeric sand or anything that hardens like concrete. You might want to try using regular sand, though keep in mind that it can wash out with rain. Since you want something that doesn't harden, just note that you'll likely still get some weed growth over time because seeds can settle in there pretty easily.
