I'm tackling baseboard trim in my home for the first time and I've noticed that opinions vary on whether to use 45-degree cuts or the coping method. Which approach would work best for a newbie like me? Also, I'm wondering if my 18g nailer with 2" nails is sufficient for this job.

Honestly, I think coping will give you the best finish, especially if you take your time to learn it. People might argue about it online, but from what I've seen, coping just seems to work better and goes quicker once you get the hang of it. Oh, and avoid using MDF if you can; it won't give you the best results.
If you're not sure about angles, I suggest using an angle finder for accuracy. And remember to cut a tag a bit longer than you usually would. It'll help you get that perfect fit for your corners. Also, marking where the studs are with tape can make nailing a lot easier since you want to hit something solid.
One technique I find useful is to first practice on some scrap pieces to find the right miter before cutting your actual baseboard. Sure, it might feel like a hassle if you're working from different locations, but it helps ensure everything fits well!
