I'm working on restoring some rusty planes, and once I've tackled the rust with some remover, I'm looking for effective methods to prevent future rust. I've heard about blueing, but it sounds like cold blueing isn't very effective for this purpose. Has anyone tried hot blueing, rust blueing, or even parkerizing on their tools? What do you recommend for keeping the sole and sides in good shape?

I’ve restored quite a few planes. My go-to is removing the rust, sanding it down a bit, and then applying multiple coats of paste wax. Buff it out, and you’re golden! That's proven to be effective for me in the long run.
Honestly, a light coating of oil or paste wax does wonders for rust prevention. Just know that bluing can wear off pretty quickly with regular use. For instance, if you look at the barrels of pump shotguns, anywhere the forestock rubs is bare of bluing.
I wouldn’t overthink it. Just get the rust off and use some 3-in-1 oil. A little touch-up every six months should do the trick. If you want to keep the sole slick, regular waxing is the way to go!
