I'm trying to figure out how to safely remove corrugated wood joiners without leaving any damage to the wood. Has anyone got tips or methods that actually work?

One method I've used is to clamp one side of the joint to a table with the joiner facing up. Then take some scrap wood, like a 2x4, and place it over the other side. Give it a few solid whacks with a mallet. It usually comes loose without too much damage. If that fails, you may have to dig at it with needle nose pliers, just be careful not to ruin the joint further. If you're okay with some damage, a hacksaw can cut the fastener but leaves bits in the wood.
A trick I've tried is drilling a row of small holes on either side of the joiner so I can grab it with needle nose vise grips. It gives you a better grip to pull it out. Just a heads up, if you've already attempted this and it didn’t work, leave it for now and try another method!
