I'm looking to build a coffee table similar to one I found online. I want to join the top to the base securely but in a way that doesn't make the fastenings obvious. Any suggestions on techniques or methods to achieve this?

You might want to try cutting a circular piece of 3/4" wood that’s about 3-4 inches wider than the diameter of the base. Chamfer the edges, then drill some slots for wood movement. Attach this circle to the base and then screw through the slots into the table, making sure the screws don’t go all the way through the top. You can also drill extra holes for screws that aren't slotted to ensure stability without interfering with the wood's natural movement.
One solid method is to use a mounting plate. You can screw the plate into the legs from the top, then use screws from underneath the plate into the tabletop. I suggest using threaded inserts; they make it easier to remove the top without stripping the wood. Just be cautious with your drilling depth to avoid breaking through the top—depth stops on your drill bit can help with that. Good luck on your project!
