I'm setting up a new garden and planning to use some chop and drop vegetables this first year to boost soil nutrients. However, I'm keen on growing plants that I'll actually eat. Any recommendations?

Are you talking about cover crops when you say 'chop and drop'? You can pretty much chop and drop any plant to add organic matter to the soil. A good crop rotation can help as well. For high nitrogen, I’d suggest growing something like beans, peas, or even apios americana.
You might want to try 'Tillage Radish.' It's actually just daikon but comes at a lower price when you buy it as tillage radish for cover cropping. Not only does it help your soil, but it’s also pretty tasty!
Lettuce could be a great option! You get a ton of seeds in a pack, and they don’t last forever since their germination rate decreases after a couple of years. So, using lettuce as a cover crop can mean healthy salads until they bolt or freeze.
