I'm curious about your favorite tomatoes for making sauce! I've never grown a sauce tomato myself, but I really love using the DOP certified San Marzano canned tomatoes. What are your personal favorite varieties for flavorful sauce or paste tomatoes?

San Marzano is always my base, but I like to add in whatever ripe tomatoes I have lying around for a bit more variety. Seems like that’s a popular technique.
I like to mix San Marzano, Mortgage Lifter, and Black Krim for my sauce. It adds so much more flavor compared to just using paste tomatoes. Has anyone else felt that way?
I noticed nobody’s mentioned Roma tomatoes! Are they just not worth it anymore? Black Krim seems to get a lot of love in these discussions!
I usually go for San Marzano and Amish Paste when I’m making sauce. I also toss in whatever other tomatoes I have on hand like Old German, Black Krim, and Sun Gold for extra flavor! It makes a difference!
How do the flavors and yields of San Marzano and Amish Paste compare? Also, are they both disease resistant?
Absolutely! Mixing in non-paste tomatoes sounds like a great idea for a richer sauce.
