I'm curious to know what everyone's go-to vegetable is for growing, preserving, and enjoying during the winter months. For me, it's corn, and green beans come in at a close second. How about you all?

Mixed pickles are my favorite! I love combining cucumbers, carrots, beets, and garlic. They make for a flavorful addition to winter meals.

Hot peppers are my jam! I dry them and use them all winter for a kick in my dishes. Can't get enough of that heat!

I swear by tomatoes! From making tomato sauce, paste, and even oven-dried tomatoes packed in olive oil, I've got it covered. There's also passata, an Italian way of preserving tomato sauce—it's pureed and barely cooked, just seasoned right for canning. It really captures that summer flavor!
