I've recently had some electrical work done in my bathroom, where we installed a fan with a timer and a light. However, my partner didn't finish sealing the area with a switch plate due to other ongoing projects. Now that we've turned the A/C on, I notice a musty smell coming from the light switch, along with what seems like cooler air. Could this be humidity entering the wall due to the missing switch plate? I'm also unsure if this smell began when we started the A/C. No other areas in the house have this odor.

Honestly, it’s a bit risky to have a fan and switch exposed like that in a bathroom. Make sure to be careful! If there’s moisture getting into the switch area, you could be setting yourself up for electrical issues down the road.
Leaving the switch plate off can definitely allow air and moisture to seep in from the wall, which might explain that musty smell. You should check for any damp spots or mold behind there. It could be that the A/C is changing the airflow and making the smell more noticeable.
