I recently had a new front door installed along with six windows, but I'm really struggling with the door knob. It sticks badly, especially if there's any tension on it. This is causing confusion for my guests, as they think the door is locked when it's not. The installer suggested that I 'get used to it' and blamed the weather stripping and knob for the problem. They tried adjusting the door multiple times, but it actually seems to have gotten worse. I've even ended up with a bent strike plate after only five days of use. Is it typical for a new door to act like this? Should I be concerned or is this something I can fix myself?

It sounds like you've got the wrong hardware for your door. The strike plate not filling the notch on the frame could be adding extra pressure, which might be causing the latch to stick.
A little lubricant on the latch could help it operate more smoothly. But honestly, from your experience, it sounds like the installer isn't very competent. Their work really does come off as sloppy.
You're not overreacting at all! I faced a similar issue when building my house. I found the latch cover on the threshold wasn't fitted properly, so I had to trim it down myself. Scratches on the knob finish are common, but it shouldn't be sticking like that. It's totally manageable to fix it yourself, but don't hesitate to bring in a more competent installer if needed. They shouldn't be gaslighting you about the issue!
