Why Not Start Edible Plants in Bigger Pots from the Start?

I've noticed a lot of people mention that they pot up their plants regularly, but I'm curious why you wouldn't just begin with a larger pot that you plan to use for the entire growth period. I'm specifically talking about container plants like tomatoes, cucurbits, and greens. I understand that larger pots take up more space and require more filler materials, but if you're going to use all that eventually, wouldn't it be more efficient to skip the hassle of transferring plants multiple times?

Starting in a bigger pot is possible, but it can make watering a bit trickier. If it's an indoor plant, you generally want to repot them now and then, even if they haven't outgrown their current pot.

I sometimes start plants in bigger pots and have never had any issues with it. It really depends on the type of plants you're growing and what your specific needs are.
