I've run into a bit of a problem with my garage door—it just won't latch unless I push it closed really hard. The latch looks fine and aligns vertically with the striker plate, and all the hinges seem secure. The house is 20 years old, so I doubt it's because of any settling shift. I have to push the door closed an extra 1/16" to get it to latch. I've thought about chiseling out the striker plate to move it closer to the door or removing the weather stripping, but I feel those are only temporary fixes. Can anyone suggest what might be causing this issue or if I should just go ahead and modify the latch hole?

It's possible that your house has shifted a bit with seasonal changes—a pretty common issue. Don't underestimate how much a house can move even after it's settled. You might want to check all screws holding the door and handle first, just to see if anything is loose. Sometimes a simple tightening can resolve the problem. Just make sure everything is snug—might save you some hassle!
Totally agree with you! I thought I had to replace a knob last summer, but it turned out just tightening the screws did the trick.
