Windows Replaced: Is This Trim a Cheap Fix?

I recently helped my elderly mother in Ireland who just had her windows replaced, and I was shocked to see that the installers fitted a trim inside the windows that we weren't even told about during their survey meeting. My brother and I believe this is just a cheap way to avoid proper filling and plastering. Plus, there's a noticeable gap between the wall and the window in the bathroom. After some back and forth, the installers agreed to come back to remove the trim, but they sent an email saying they won't be responsible for any plaster cracking over time and they won't clean up any mess made during the plastering. We only paid 20% upfront and they want the rest now, but I don't want to pay until they sort out the issues. Are they trying to take advantage of us? My mother is really upset as she saved for years to get these windows done, and the owner essentially tried to say this is standard practice nowadays. It's definitely smart to hold off on that final payment. That trim shortcut is unfortunately a common practice, but if plastering was something you expected as part of the job, they should honor that. It sounds like they aren't being upfront about the work they’re doing, and holding that 80% payment gives you some leverage to ensure they fix everything right.
